Quick Blueberry French Toast Bake

This is a quick version of a blueberry french toast casserole that is sure to please, especially if you're like me and forget to plan ahead!

Ingredients

Scale
  • Loaf of day-old bread, cubed
  • 1 cup fresh blueberries
  • 7 large eggs
  • 1 cup heavy cream
  • 1/4 cup brown sugar
  • 2 tbsp. vanilla
  • Cinnamon
  • Nutmeg
  • Maple syrup
  • Bacon or sausage

For the Topping (Optional):

  • 1/3 cup brown sugar
  • 6 tbsp. melted butter
  • 1 tsp vanilla
  • Cinnamon and nutmeg
  • Powdered sugar and whipped cream are optional

Instructions

  1. Preheat Traeger to 375˚.
  2. Drizzle maple syrup in the bottom of a seasoned 12" cast iron skillet. Then add cubed bread.
  3. Whisk together eggs, heavy cream, brown sugar, vanilla, cinnamon, and nutmeg (to taste) and pour on top of bread mixture. Mix well. (See Notes)
  4. Add blueberries and gently mix. I add extra on top.
  5. At this point it is ready to bake. Mix brown sugar, cinnamon and nutmeg with melted butter and pour on top. Feel free to omit this step, it will still be great.
  6. Throw some bacon or sausage on that grill, too!
  7. Bake for around 50 - 60 minutes.
  8. Drizzle with maple syrup, sprinkle with powdered sugar or even top with whipped cream. Enjoy!

Notes

Loaves of bread vary in size. You may need to add more egg and cream if it's not moist enough. If too moist, add more bread.

I've made this without sugar in the egg mix.

This can be refrigerated overnight.

Cooking times vary on weather conditions. Check 30 minutes in. Sometimes I need to up the temperature on the grill. This time I started at 350˚but ended up increasing it to 375˚
