I add chives if I happen to have them, then top with smoked bacon, but these are just extras and not needed.

I like to switch it up and add sweet potatoes to the mix. And hey! Don't peal those taters. The skins will add immune-boosting vitamins as well as flavor to your dish. Sean was around and helped with the taters. He looks like a professional (check out that form).
Add the mixture to your favorite cast iron or casserole dish. The 12" double handle Lodge Cast Iron skillet is my go-to. Top with a few more pats of butter, chives, and smoked paprika. Bake right away or cover then place in the refrigerator until ready to bake.
Chop up the smoked bacon and top it off.
This dish is Gouda any day of the week.

- You could seriously eat this as a main course, but I’d add lots more bacon!
- I love chives, so I usually add more. If you do not have chives, leave out of the potato mix and then top with scallions.
- Jalapeños would be an excellent addition for flavor and heat.
- No Gouda? No problem. Any cheese will do.

Gouda Mashed Potato Bake
A cheesy Gouda potato casserole with red and sweet potatoes that will not disappoint. Did I mention it also has bacon?

Ingredients
- 5 lbs red potatoes and sweet potatoes skins on diced
- 5 cloves garlic sliced
- 1 cup Gouda
- 1 egg beaten
- 6 tbsp softened butter plus extra for topping
- 8 oz cream cheese
- ½ cup sour cream
- ½ cup heavy cream or half and half
- 2 tbsp chives plus extra for garnish (optional)
- 3 - 4 slices smoked bacon diced (optional)
- Smoked paprika for garnish (optional)
Instructions
Get Ready
- When ready to cook, set Traeger temperature to 375˚ F, and preheat lid closed for 15 minutes.
- Boil diced potatoes and garlic in salted water until tender.
- Drain and add cream cheese, sour cream, heavy cream, butter, egg, salt, pepper, and chives.
- Mash.
- Add mixture to a greased cast iron skillet or casserole dish.
- Top with a few pats of butter, smoked paprika, additional chives.
Cook
- Cover and refrigerate until ready, or add to a heated 375˚ grill and bake for 30 - 40 minutes until golden.
Notes
To make ahead, cover and refrigerate up to two days. Remove at least 30 minutes then uncover before baking.
If cooking during the winter months on a Traeger, I would bump the temperature to 400˚.
