
My Grandma Riggs made macaroni salad with green olives. Olives are something that I have not acquired a taste for. Sean on the other hand loves them. Seriously, I keep trying, but yuck! Maybe someday I’ll like ‘em.
But I’m way off track here. Let’s get back to business.
My Grandma Bess made a different type of macaroni salad. Parboiled carrots and Gherkin sweet pickles are the stars of this recipe. I believe she used Marzetti Slaw and Miracle Whip.
This is my smoked-up version of this recipe with homemade sauce.

Ingredients
"Winging It"* Ingredient List:
- 16 oz. Cooked Pasta
- 5 Parboiled Carrots Sliced
- 1 cup Sliced Gherkin Sweet Pickles
- 2 cup Sliced Celery
- ½ cup Red Onion (optional)
- 6 Hard Boiled Eggs
- 2 cups Mayonaise
- ½ cup Sugar
- ¼ cup Rice Wine Vinegar
- 1 Tbsp. Yellow Mustard
- Smoked Paprika
Instructions
Start Cooking
- Cook pasta according to box.
- Parboil carrots.
- Mix mayo, sugar, rice wine vinegar, and mustard. Set aside.
- Toss pasta and carrots with olive oil, salt and pepper then spread onto sheet pan. Place on Traeger heated to 225˚ Super Smoke (if available). Smoke for 20 minutes.
- Slice carrots, celery, pickles and eggs and add to pasta. Toss with salt and pepper.
Finish Up
- Mix in creamy sauce. Refrigerate an hour or so. Top with smoked paprika.
Notes
* Why the "Winging It" ingredients? Because you can adjust the amount of carrots, celery, red onion, eggs, and pickles according to your own tastes.
