Ingredients

Scale
  • 240 grams bread flour (about 2 cups)
  • 3/4 cup hot water plus more as needed
  • 1.5 tsp baking powder
  • 3/4 tsp sea salt
  • 1/4 cup extra virgin olive oil, plus more if needed

Instructions

Dough

  1. Combine dry ingredients and oil in a mixing bowl.
  2. Mix on low until crumbly, scraping sides as needed (you'll need to add more oil if the mixture is too dry).
  3. Pour in 1/4 cup hot water, adding more in small amounts until the dough forms into a soft ball.

Balls

  1. Take palm-sized amounts of dough and form into a ball in one palm.
  2. With your other hand, pull the dough from the sides and push into the center until a smooth ball is formed.
  3. Place all on a baking sheet and let rest for 15-30 minutes.

Roll Tortillas

  1. After resting, spread a small amount of flour on a countertop.
  2. Press a ball of dough into a circle with your palm.
  3. Use a rolling pin to roll the dough as thin as possible, keeping as much of a circle shape as you can.

Cook the Tortillas

  1. Have a cast-iron skillet ready on medium heat.
  2. One at a time, place a rolled tortilla in the pan.
  3. Cook until bubbles form and flip, a few minutes.
  4. Cook until browned on the 2nd side, a few minutes.
  5. Rest each tortilla on a baking sheet to cool.
