Who doesn’t like nachos? So easy and versatile, and when you make them at home, you don't have to waste half of the plate because the chips go soggy. They're the perfect snack for filling up those weekend gaps when you don't want to spend much time in the kitchen.
When Sean’s belly is growling he tells me he needs a “crunchy snack,” and I think this fits the bill. It takes a bit of time smoking those delicious chicken thighs, but totally worth the wait. Plus, thighs have so much more flavor than breasts, so do yourself a favor and get a big pack of boneless thighs.
Since I’m not a fan of the nacho cheese sauce you get at a football game, I use a shredded blend from the supermarket. It tastes a hell of a lot better and doesn't have the chemicals that keep stadium cheese alive for months.

Mexican Crema drizzled on top just makes these nachos extra special. It's a milder and less thick version of American sour cream. But you can always use sour cream if it's all you have.

Smoked Blackened Chicken Nachos

Ingredients
Blackened Seasoning
- ½ tsp. Smoked paprika
- ½ tsp. Salt
- ¼ tsp. Cayenne pepper
- ¼ tsp. Cumin
- ¼ tsp. Oregano
- ¼ tsp. Thyme
- ¼ tsp. White pepper
- ¼ tsp. Garlic powder
- ¼ tsp. Onion powder
The Other Stuff
- 6 Boneless chicken thighs
- Tortilla chips
- 1 Diced red pepper
- Green onion
- 2 cups of a Mexican blend cheese
- Mexican Crema
- Homemade or jarred salsa
- Apple juice (optional)
Instructions
- Heat Traeger to 225˚ Super Smoke if available
- Mix the blackened seasoning, rub on chicken thighs then place on grill
- Rub chicken thighs with seasoning. Place on grill and smoke for 1 hour
- Turn up the heat to 325˚ and continue cooking for around another hour until temperature reaches 165˚
- Spritz with apple juice (optional)
- Dice chicken
- In a seasoned cast iron skillet add a layer of chips topping with red pepper, onion, cheese
- Repeat
- Place back on grill until cheese is melted
- Top with green onion and Mexican Crema
Notes
Add some jalapeños for extra heat.
