    Beef and Sweet Potato Casserole

    Our freezer is full of ground beef, so I'm always looking for creative ways to use up ground meat. I came across Michael Symon's Sweet Potato Chili Casserole. I had the ingredients plus some and decided to bake a variation on the Traeger.

    Looking for a quick and deliciously easy recipe? Look no farther than this smokey beef and sweet potato casserole. Perfect for those days where you either do not have time or do not feel like cooking.

    Ingredients

    Scale
    • 1 lb. Ground Meat
    • 1 large sweet potato
    • 1 Chopped Onion
    • 1 Jalapeño
    • 4 Garlic Cloves Minced
    • 1 Cup Chopped Mix of Red, Yellow and Orange Pepper
    • 5 oz. Simply Nature Organic Beef Bone Broth
    • 2 Cans 14.5 of Muir Glen Fire Roasted Tomatoes
    • 15 oz. Can of Simply Nature Black Beans Drained and Rinsed
    • 1.5 Tbsp. Chili Powder
    • 1 tsp. Cumin
    • 1 tsp. Oregano
    • 1 tsp. Basil
    • Salt and Pepper

    Instructions

    1. Start: Heat the Traeger to 475˚.
    2. Brown ground meat.
    3. When meat is almost browned, add chopped onion, garlic, jalapeño, pepper, fire roasted tomatoes, diced sweet potato and approximately 5 ounces of beef bone broth.
    4. Season with a few dashes of chili powder, cumin, oregano, salt, and pepper.
    5. Toss in the can of fire roasted tomato and rinsed black beans.
    6. Lower to 350˚ and bake for 30-45 minutes until potatoes are soft.
    7. Top with cheese of your choice, green onion and cilantro.

    Notes

    Remember my recipes are to be used as a guide for inspiration.

    You can always add a little Wondra or flour to thicken. As always, season according to your own taste.

      How much sweet potatoes do you suggest? It's not on the ingredients list.

        I usually use one large sweet potato. But, sometimes add more depending on the crowd.
