Our freezer is full of ground beef, so I'm always looking for creative ways to use up ground meat. I came across Michael Symon's Sweet Potato Chili Casserole. I had the ingredients plus some and decided to bake a variation on the Traeger.
My Lodge 12” Seasoned Cast Iron Dual Handle Skillet was perfect. It’s my go to skillet, loving the dual handles.

This is so colorful and good. Nice to have a casserole that's not extremely heavy for a change.

I usually use one large sweet potato. But, sometimes add more depending on the crowd.
