Sausage, Potato, Pepper Skillet

A satisfying sausage skillet with potato, onion, pepper, and zucchini.

Units Scale
  • 5 sweet sausage links
  • approximately 2 cups diced potatoes
  • 1 small diced onion
  • 1 red pepper
  • 1 small zucchini
  • garlic
  • spinach
  • shredded cheese
  • olive oil
  • salt & pepper


  1. Set Traeger to 375˚ and place cast iron skillet inside
  2. Dice potatoes, onion, peppers, and garlic
  3. Once the grill gets to temperature, add the potatoes with around 1 tbsp olive oil and cook for around 15 minutes
  4. Toss potatoes around then add chopped vegetables to the potatoes.
  5. Also, place sausage on the grill cooking around 20 minutes until sausage is done flipping halfway through.
  6. Toss zucchini in olive oil, salt, and pepper then place on the grill for around eight minutes before the sausage is done. Flipping halfway.
  7. Slice sausage adding to the potatoes.
  8. Season with salt and pepper.
  9. Top with cheese and put back on the grill until melted.
  10. Serve over spinach.


  • Add additional vegetables or potatoes if you need to bulk it up.
