    Weekend Frittata Breakfast

    Finished frittata in a cast-iron skillet

    One of my favorite things to bake on the pellet grill is a Frittata, especially on lazy weekend mornings.  While everyone is still cuddled in bed, I make coffee and fire up the Traeger. Then I start to prep.

    You can customize the ingredients to your taste or what is available. Sometimes I like using my smaller 10.5" Traeger Cast Iron Skillet, but this time I used my 12” Lodge Double Handled Skillet. Seriously, you’ll hear me say this over and over: "If you don’t have one, buy one." You won’t be sorry.

    And if there happens to be any leftovers, they're great reheated the next morning.

    We all have cast-iron products in some form or another for cooking - they can't be matched.

    This was a thinner Frittata despite the fact I used 14 eggs. Some of our chicks are just starting to lay, so they were smaller eggs. Instead of adding smoked bacon with egg mix, it was served on the side.

    Ingredients

    Be sure to read the notes!

    • 5 slices cooked bacon (I smoke mine)
    • 12 - 14 eggs
    • ¼ cup heavy whipping cream
    • 1 small onion diced
    • 3 garlic cloves diced
    • ½ diced peppered
    • 1 cup sliced mushrooms
    • 2 cups chopped spinach
    • 1 tsp. thyme
    • salt
    • pepper
    • olive oil
    • ½ cups cheese of your choice

    Instructions

    Prep

    1. Place cast-iron skillet in Traeger and heat to 350˚.
    2. Meanwhile, chop garlic, red onion, red pepper, crimini and shiitake mushrooms.

    Cook the Veggies

    1. Add olive oil to skillet and sauté vegetables and mushrooms.
    2. When vegetables are semi-soft, add chopped spinach and let cook down.

    Prepare Egg Mixture

    1. Whisk egg with heavy whipping cream. Add bacon and season with salt, pepper and thyme.
    2. Add egg mixture to skillet. Sprinkle with Gruyere then bake until the center is solid.  Turning skillet around 10 minutes in.

    Finish Up

    1. Remove from grill once center is set after around 20-30 minutes. Or finish off under broiler in oven.

    Notes

    The ingredient list is a guide. I do not measure stuff. I adjust to what I have. Sometimes the Frittata doesn’t set soon enough and the vultures (family) start squawking at me. If that's the case, I place it under the broiler for a few minutes and voila! Vultures are happy.
