Gouda Mashed Potato Bake

A cheesy Gouda potato casserole with red and sweet potatoes that will not disappoint. Did I mention it also has bacon?

Ingredients

Scale
  • 5 lbs red potatoes and sweet potatoes skins on diced
  • 5 cloves garlic sliced
  • 1 cup Gouda
  • 1 egg beaten
  • 6 tbsp softened butter plus extra for topping
  • 8 oz cream cheese
  • 1/2 cup sour cream
  • 1/2 cup heavy cream or half and half
  • 2 tbsp chives plus extra for garnish (optional)
  • 3 - 4 slices smoked bacon diced (optional)
  • Smoked paprika for garnish (optional)

Instructions

Get Ready

  1. When ready to cook, set Traeger temperature to 375˚ F, and preheat lid closed for 15 minutes.
  2. Boil diced potatoes and garlic  in salted water until tender.
  3. Drain and add cream cheese, sour cream, heavy cream, butter, egg, salt, pepper, and chives.
  4. Mash.
  5. Add mixture to a greased cast iron skillet or casserole dish.
  6. Top with a few pats of butter, smoked paprika, additional chives.

Cook

  1. Cover and refrigerate until ready, or add to a heated 375˚ grill and bake for 30 - 40 minutes until golden.

Notes

To make ahead, cover and refrigerate up to two days. Remove at least 30 minutes then uncover before baking.

If cooking during the winter months on a Traeger, I would bump the temperature to 400˚.
