Hummus & Veg Plate

We're using our pre-made hummus along with fresh vegetables to make a quick and tasty vegetable plate that can be shared by everyone.

Ingredients

  • Hummus (see recipe)
  • Bell peppers - small or large variety, sliced
  • Carrots - any that you have on hand
  • Mozzarella, pulled fresh or store-bought
  • Cucumbers, marinated
  • Parsley
  • Extra virgin olive oil
  • Hungarian paprika
  • Madon
  • Fresh cracked pepper

Instructions

  1. Marinate cucumber slices in red wine vinegar, sea salt, and cracked black pepper for a minimum of 10 minutes, up to 30 minutes
  2. Take a couple spoonfuls of the hummus and place in the center of your plate, circling it around to create a small well in the center
  3. Drizzle a couple tablespoons of EVOO into the well, sprinkle some paprika over the top, crack some black pepper, and add chopped parsley
  4. Place cheese and vegetables around the hummus
  5. Season everything with Maldon and fresh black pepper

Notes

If you don't make your own moz, try to buy freshly made moz from your favorite grocery store.

Drizzle EVOO on the vegetables for additional flavor.

Smoked paprika can be substituted for Hungarian, but I don't like it here.

When you use Maldon, grab a bit with your two forefingers and thumb and crush it with those fingers as you apply it to the vegetables - it breaks into smaller bits.

Don't be afraid to spice things up with some serrano or jalapeño peppers.
